It may be of little comfort to vegetarians, but at least the animals die with the poetry of that mellifluous French voice in their ears. "Before killing something I always talk to it," he says, sounding like a Gallic Hugh Fearnley-Whittingstall. "An animal that's been caressed before it's killed dies peacefully and its muscles don't contract with adrenalin. If an animal is slaughtered in a stress-free way it tastes better."
